	Sam Sifton of The NY Times Reviews Graffit Restaurant - THERE is something old-fashioned about Graffit, a new Spanish-modernist restaurant on the Upper West Side, something conventional despite the loud bar up front, its tall stools, yelpy music and graffiti-covered walls. This feeling does not come from the food. Jesús Núñez, the Madrid chef who opened the restaurant in December, has no evident interest in classical cooking — either Spanish or any other kind. His attention instead appears to be centered on art and architecture, on a playful response to culinary tradition rather than an allegiance to it. Even the silverware at Graffit seems to be a product of this reaction, with pieces that are as long and skinny as chopsticks, with little mittens on the business ends.
